Crown Royal Maple Cupcakes

Crown Royal Maple Cupcakes

The other day I asked Austin his favorite kind of cake. In typical guy manner, he responded with some nonsense about how he didn’t really have a favorite (Mine is Red Velvet. Shocking, I know). How do you not have a favorite kind of cake? Seriously. I don’t get it. I understand that cake is amazing and it’s all just so good, but you have to have one kind that really does it for you more than the others. Whatever. Men. Anyway…

In my mission to make him the perfect birthday cupcakes, I wavered between Guinness Chocolate Stout Cupcakes and Bourbon Bacon Cupcakes and many ideas in between.

And then the perfect idea came to me.

Crown Royal Maple.

Bacon. Oh, did I leave that part out? Yeah. There’s bacon.

Two of his favorite things. He said this is one of the best things I’ve ever baked.

Yeah. I win. /pats self on back

Yield 2 dozen

  • 2 c. cake flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. butter, softened
  • 1 1/2 c. granulated sugar
  • 8 egg yolks
  • 1 1/2 tsp. vanilla extract
  • 1/4 c. Crown Royal Maple
  • 1/2 c. milk
  • 5-6 slices of bacon, cooked and chopped

Preheat oven to 350° and prepare a cupcake tin with liners. Sift flour, baking soda, and salt together in a mixing bowl. Set aside.

In the bowl of a stand mixer, cream butter and sugar. Beat in egg yolks one at a time, and stir in vanilla extract.

In a separate bowl, whisk together Bourbon and milk. Add the flour mixture and bourbon-milk mixture to butter and sugar, alternating between the two. Mix until thoroughly combined.

Fill each cupcake well 1/3 full with batter. Add bacon crumbles. Fill top with batter until 2/3 full. Bake for 20-25 minutes (or until a toothpick comes out clean). Set aside to cool.

Crown Royal Maple Buttercream

  • 1 c. butter, softened
  • 3 c. confectioner’s sugar
  • 2 tsp. vanilla extract
  • 2 tbsp. Crown Royal Maple
  • Splash of milk

Using a stand mixer with the whisk attachment, cream together sugar and butter.  Add vanilla extract and Crown Royal Maple until mixed thoroughly. Pour in milk until correct consistency is reached. If you overpour, just correct by adding a bit more sugar and butter. Decorate cupcakes!
