When I opened “New Post”, I had a completely different recipe in mind to write about. But the truth is… I’m in this mood where all I want to do is lay in bed, be lazy, and watch Gossip Girl. Yeah. I watched the entire first season over the weekend. I should be ashamed that I watched that much of it in such a short time period, but I’m not. For years I’ve heard about the awesomeness that is Gossip Girl, and I finally gave in. It’s helping me kill time before my favorite person gets home from deployment. A girl has to do something to distract herself, right?
Speaking of distraction, I’m distracted from my point: laziness (and cookies).
These are the laziest cookies ever… hence why I call them “Lazy Girl Cookies”. I found them on Pinterest, and well, I figured they actually sounded like a good idea unlike some massive pinstrocities that are on that site.
Plus, I wanted a cookie and I happened to have the ingredients in my pantry. It all worked in my favor.
And it was a really, really good decision. I think my co-workers may have liked them based on how fast they went. Pretty delicious.
Lazy Girl Cookies
Yield 2 dozen
Ingredients:
- 1 box cake mix (I chose Spice Cake)
- 2 eggs
- 1/2 c. vegetable oil
Pre-heat oven to 350° and line a baking sheet with parchment paper. In a large bowl, mix together all ingredients until a thick batter forms. Scoop tablespoon side balls of batter onto cookie sheet with 1-2 inches between each cookie. Bake for 10-12 minutes, until edges begin to brown. Let sit on cookie sheet to cool for 3-5 minutes before transferring to a cooling rack.





They look like they bake up perfectly!
