A vast majority of the time if you ask me where I want to go eat, I’ll say “Somewhere I can get a big salad”. I know, based on the bacon & other stuff I post, that seems surprising. But we’ve been over this.
Stephanie texted me a few weeks ago that there was a new “Big Salad” option in town – Newk’s Express Cafe. Hurray for big salads! Even better? It’s right in front of the Target I frequent. Double win! Not only does Newk’s have big salads, they also have pizzas, soups, sandwiches & pretty tasty-looking desserts.
In totally unexpected & shocking news, I chose a 1/2 Chicken Pesto Panini slathered in goat cheese.
With a 1/2 Caesar salad.
Yes, that’s a half. Yes, I’m aware it’s huge. It’s also topped with some pretty amazing croutons. Next time, I’ll ask for the dressing on the side because like most restaurants, they put entire too much dressing on salads. I did like the dressing & it’s hint of crushed black pepper though.
Overall, the food was fresh & made to order, which is a huge plus in my book. I love how the bread was toasted – it was soft yet still crunchy on the outside. A lot of times, toasted bread can be difficult to bite into, but this was very easy to eat. Not sure if that’s a good or a bad thing…
Towards the side entrance is a great grab & go selection of soup, sandwiches, salads & desserts. I’ll have to keep it in mind when I need a healthy option for lunch & I’m not in the mood to sit down somewhere.
Newk’s also offers large portions of their chicken salad & soups – although I found them to be a little on the pricey side.
