Buffalo Chicken Enchiladas

I believe in giving credit where credit is due. And boy, is credit due on these suckers.

I’m a huge fan of Jessica at How Sweet It Is. She’s an evil genius always cooking & baking up sinful concoctions & that’s why I love her (& why my skinny jeans hate her).

A week or so ago, she posted Buffalo Chicken Enchiladas. Thats right: Buffalo Chicken + Mexican Food = Heaven. It’s an equation that’s been proven correct time & time again (I’ve often been known to make Buffalo Chicken Tacos).


Spicy. Cheesy. Buffalo-y. While it’s fabulous on it’s own, next time I may swap the gorgonzola cheese for a drizzle of bleu cheese dressing. Divine.

  1. Looks delicious! I’ll definitely have to make these. Adrian would LOVE them. Although I’ll have to make mine less spicy than his bc he likes to eat SPIIIIIICY food whereas I like to keep my tastebuds.
